  • For the relish:
  • 10 oz. corn, fresh or frozen
  • 1 cup red onion or 1/2 cup Vidalia onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1/2 cup pickle relish or chopped pickles
  • For the marinade:
  • 2 tsp. sugar
  • 2 TBS corn starch
  • 4 TBS yellow mustard
  • 3 TBS ketchup
  • 1 tsp. salt
  • 1/4 cup cider vinegar
In a saucepan over medium heat, mix all ingredients together and cook for 3-4 minutes. Pour mixture over relish and refrigerate at least two hours before serving.
