Vegetables & Side Dishes

  • 4 cups chopped vegetables
  • 1â�„2 cup chopped red onion
  • 3 cups diced ripe tomatoes
  • 1â�„2 cup shredded fresh basil
  • 1 cup shaved Parmesan cheese
  • 1 lb. firm Italian bread, torn into bite-size pieces
  • for the dressing:
  • 1â�„2 cup extra virgin olive oil
  • 1â�„4 cup red wine vinegar
  • 1 TBS sugar
  • 1 clove garlic, minced
  • Salt
  • Pepper
Mix together the vegetables, onion, tomatoes, basil and Parmesan; mix. Add the bread and mix again.
Combine the dressing ingredients together in a jar with a screw-on top; seal and shake to combine. Mix half the dressing with the salad; let stand at least 15 minutes. Add remaining dressing and toss; serve.
