ROASTED POTATO SALAD

4 cups new red potatoes, quartered
1 cup mayonnaise
4 slices bacon, cooked and chopped
1/4 cup green onions, sliced
1/4 tsp. salt
1/4 tsp. pepper
Preheat oven to 425 degrees. Spray a baking sheet with nonstick cooking spray and place the potatoes on it. Bake the potatoes for 30-35 minutes or until tender and brown, turning once.
Mix the mayonnaise, bacon, onions, salt and pepper in a large bowl; add potatoes and mix lightly. Serve warm or chilled. Serves 6.
