Pineapple Upside Down Cake

  • 1 cup brown sugar
  • 1 stick butter melted
  • 1 can sliced pineapple
  • 1 jar maraschino cherries
  • 1 package yellow cake mix with required ingredients
Spray a 9- by11-inch baking dish with cooking spray. Press brown sugar in bottom. Pour melted butter over and stir until well mixed and sugar begins melting. Drain pineapple (save juice for the cake). Place pineapple slices in rows over the sugar and butter mixture and place cherries in and around pineapple.  Mix cake by directions on package, substituting pineapple juice for water. Pour over pineapple, cherries and brown sugar. Place in oven and bake according to package.
