Bessie’s Roast Beef and Tomatoes

  • 2-3 lbs beef roast (sirloin tip roast is best)
  • 2 quarts home-canned tomatoes
  • 1â�„4 cup garlic salt
  • 1 TBS onion salt
  • 1 tsp. black pepper
Pre-heat oven to 350 degrees. Rinse beef and pat it dry. Place in large baking dish sprayed with Pam. Sprinkle on sides of meat the garlic salt, onion salt and pepper. Pour one quart of canned tomatoes over beef. Cover dish tightly with foil. Place in oven for one hour. Check liquid level and add half a quart of tomatoes. Bake one more hour, check meat for doneness and add the rest of the tomatoes. Uncover and bake for 30 minutes. Meat should be tender and falling apart at this time. Allow to rest and cool for 10 minutes before cutting.
