PUMPKIN BITES

Ingredients:
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. allspice
  • 1/4 cup melted butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 egg white
  • 1 cup canned pure pumpkin
  • 1 tsp. vanilla
  • 1/2 cup semisweet chocolate chips, optional
  • 1/2 cup raisins, optional
Preheat oven to 350 degrees.
In a medium bowl, using a whisk, combine the flour, baking powder, baking soda, salt, cinnamon, ginger and allspice.
In a large bowl, using an electric mixer, beat butter, sugar, egg, egg white, pumpkin and vanilla. Stir flour mixture into wet ingredients until just combined. Fold in chocolate chips and raisins if desired.
Drop by spoonfuls about an inch apart on a parchment or silicone-lined cookie sheet. Bake for 12-14 minutes. Remove from cookie sheet to a cooling rack.
Makes 30 cookies.
