  • 2 large sweet potatoes
  • 1 1/2 sticks margarine
  • 1/4 tsp. allspice
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. vanilla
  • 1 1/2 cups sugar
  • 1 can evaporated milk
  • 2 eggs, beaten
  • pinch of flour
  • 1 frozen (and thawed) or refrigerated pie crust
Preheat oven to 350 degrees.
Peel the potatoes; boil until tender.
Drain and mash the potatoes and add margarine, spices, vanilla, sugar, milk, flour and eggs; whip with a mixer. Pour the mixture into the pie crust and bake for 45 minutes to an hour.
