Easy Cupcakes

  • 11â�„3 cups sugar
  • 1â�„2 cup shortening
  • 2 large eggs
  • 1 cup milk
  • 1 tsp. vanilla
  • 21â�„4 cups all purpose flour
  • 3 tsp. baking powder
  • 1â�„2 tsp. salt
Preheat oven to 350 degrees. Line a cupcake pan with paper liners.
Cream together sugar, shortening and egg; add milk and vanilla and blend slowly for 1 minute.
Combine flour, baking powder and salt and add to wet ingredients; beat for 1 minute on medium speed. Scrape side of bowl with a spatula, beat for one more minute on medium speed and scrape the bowl again. Beat on high speed for 1 minute and 30 seconds until well mixed. Spoon cupcake batter into paper liners.
Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pans then remove from pans and cool completely. When cooled, frost or decorate.
