Vegetables & Side Dishes

  • 3 cups water
  • 2 cups chopped celery
  • 1 cup chopped onion
  • 1 tsp. poultry seasoning
  • salt to taste
  • pepper to taste
  • 1 lb. bulk sausage, browned and drained
  • 3 cups crumbled day-old cornbread
  • 1 egg, lightly beaten
Preheat oven to 350 degrees.
Combine the water, celery, onion, poultry seasoning, salt and pepper in a saucepan. Cook over medium heat for 20 minutes; remove from heat. Stir in sausage, cornbread and egg; mix well. Pour mixture into greased casserole dish and cover with foil.
Bake for 1 1/2 to 2 hours. Uncover during last 20 minutes of baking time to brown. Makes 6 servings.
