MEAT LOAF WITH TOPPING
Entrees

Ingredients:
  • for loaf
  • 1 1/2 lbs. ground beef
  • 1 cup tomato juice or 1/2 can tomato sauce
  • 3/4 cup uncooked oatmeal
  • 1 tsp. salt
  • 2 eggs, beaten
  • 1 package onion soup mix
  • 1/4 tsp. pepper
  • for topping
  • 2/3 cup ketchup
  • 1/2 cup brown sugar
  • 1 1/2 tsp. mustard
Preheat oven to 350 degrees.
Combine all loaf ingredients and mix well. Press into an ungreased loaf pan. Combine all topping ingredients and mix; pour over meat loaf. Bake for one hour. Yields 5-6 servings.
For a large meal, mix three recipes to make each 8-pound loaf, which takes a cooking time of 1 hour 45 minutes to reach a loaf temperature of 175 degrees.
