Apple Cake

Ingredients:
For Cake
3 eggs,
1 cup sugar
1⁄2 cup veg. oil
2 cups sifted flour
2 tsp. cinnamon
2 tsp. vanilla
4 cups peeled, diced apples
1⁄2 cup chopped nuts of choice (optional)
For Icing (optional):
1 stick melted butter
1 cup brown sugar
1 tsp. vanilla
1⁄4 cup milk
Mix cake above ingredients and bake at 350 degrees for 25-30 minutes for a 9 x 13 pan; 30-35 mins. for 8 x 8; and 40 minutes for loaf.
Mix icing ingredients and pour over warm cake. Probably best served immediately, but it doesn’t have to be.
