  • 2 cups kosher salt
  • 2 cups brown sugar
  • 4 lb. pork loin
  • 1 cup sugar
  • 1â�„4 cup thyme or rosemary, chopped
  • 1â�„4 cup ginger
  • 1â�„4 cup cinnamon
Mix the salt and brown sugar together. Coat pork loin in the salt mixture; cover and refrigerate overnight.
Preheat oven to 350 degrees.
Remove pork from refrigerator and rinse in cold water. Mix the white sugar, thyme, ginger and cinnamon together; coat pork. Bake uncovered for 11�2 hours.
