  • 2 cups heavy cream
  • 1 bag meringue cookies
  • 1 lb. raspberries
Whip heavy cream until stiff. In a large glass bowl, layer crushed meringues, then raspberries, then whipped cream. Carry on layering meringues, raspberries and cream, ending with a layer of meringues.  Leave in refrigerator for a couple of hours before serving.
(This dessert is named for Eton, a private school just outside London.)
