  • 11â�„2 cups raisins
  • 1 cup honey
  • 3â�„4 cup water
  • 2â�„3 cup canola oil
  • 1â�„2 cup chopped nuts
  • 11â�„2 tsp. salt
  • 11â�„2 tsp. lemon extract
  • 1 tsp. vanilla
  • 6 cups quick-cooking oats
Stir together all ingredients except oats. In a blender, chop two cups of the oats into a coarse flour. Combine all ingredients. Let stand 10 minutes.
Shape into cookies (may use a 11�2-TBS cookie scoop). Place on an oiled cookie sheet. Flatten slightly. Bake at 350 degrees for 25-25 minutes until light golden brown.
