  • 2 catfish, filleted and cut into chunks
  • Milk or buttermilk
  • 1 TBS Cajun seasoning
  • 11â�„2 cup seasoned flour
  • 11â�„2 cup cornmeal
  • Peanut oil
  • Salt, optional
In a dish, cover the fish with milk; soak overnight. Remove from milk and sprinkle with seasoning. Mix the flour and cornmeal together; coat fish with mixture. Deep fry in peanut oil for 6 minutes or until golden brown. Sprinkle with salt if desired.
