  • 21â�„2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1â�„2 tsp. nutmeg
  • 1â�„2 tsp. salt
  • 11â�„2 cups sugar
  • 1 stick butter, softened
  • 1 cup cooked, mashed pumpkin
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup mini chocolate chips, optional
Preheat oven to 350 degrees.
Combine all dry ingredients together except sugar and chocolate chips. Beat sugar and butter in large bowl until well mixed. Beat in pumpkin, egg and vanilla until smooth. Fold in dry ingredients and chocolate chips. Drop by rounded tablespoons onto a greased baking sheet. Bake 15-18 minutes. Cool on the baking sheet for two minutes. Remove and cool completely.
