BANANA MUFFINS

Ingredients:
  • 1 egg
  • 2 cups baking mix
  • 1 1/4 cups mashed ripe bananas
  • 1/3 cup sugar
  • 3 TBS vegetable oil
Preheat oven to 400 degrees.
Grease the bottoms of each cup of a 12-cup muffin pan or line with paper liners.
Beat the egg slightly and stir in remaining ingredients just until moistened. Divide the batter evenly among the 12 cups. Bake 15 minutes or until golden brown.
