  • 1 cup softened butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup solid-pack canned pumpkin (not pie filling)
  • 2 cups flour
  • 1 cup quick (or regular) oats
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1â�„2 tsp. salt
  • 1 cup chocolate chips
Preheat oven to 350 degrees. Lightly grease cookie sheets.
Mix first six ingredients together. Blend dry ingredients into wet, adding chocolate chips last.
Drop dough by 1�2-cup measures onto cookie sheets. Bake at 350 degrees for 20 to 25 minutes.
Remove from pan, allow cookies to set on pan about two minutes, then remove cookies to wire rack to cool completely.
