  • For cake batter:
  • 2 eggs, well beaten
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 2 tsp. baking soda
  • 1â�„2 cup canola oil
  • 1 tsp. vanilla
  • 1 can (#303) fruit cocktail (do not drain)
  • Frosting for Fruit Cocktail cake
Preheat oven to 350 degrees.
Beat all ingredients except fruit cocktail well by hand. Add fruit cocktail and juice last.
Bake in 13 x 9 inch glass baking dish for about 45 minutes. Frost while warm.
Make frosting: Mix all ingredients and bring to a boil in a medium-sized pan. Cook 11�2 minutes after it begins to boil. Spread on cake while still warm.
