FALL FEST BREAKFAST CASSEROLE
Eggs & Cheese

8 slices loaf bread of choice
1â�„2 lb. crumbled country ham, fat removed
2 cups shredded cheddar cheese
1 cup yellow peppers, cut into small pieces
1 cup orange peppers, cut into small pieces
1 small can mushrooms, sauteed in butter
1 dozen eggs
1 cup milk
1â�„2 tsp. pepper
1â�„2 tsp. salt
Butter a 9- by- 13-inch glass baking pan.
Place bread slices in the bottom of the pan and cover with the ham, cheese, peppers and mushrooms. Mix the eggs, milk, pepper and salt together; pour over ingredients in pan. Refrigerate overnight. Preheat oven to 325 degrees and bake for one hour. Let set 10-15 minutes before serving. Serves 12.
