Eggs & Cheese

  • 1 lb. spicyâ�„hot sausage
  • 1 cup quick-cooking (not instant) grits
  • 4 cups water
  • 1â�„2 tsp. salt
  • 13â�„4 cups extra-sharp cheese, grated
  • 3 eggs
  • 1â�„2 cup milk
  • 3 TBS butter
Preheat oven to 350 degrees.
Brown and drain the sausage. Cook grits in water and salt until done. Combine the sausage, grits, 11�2 cups cheese, eggs, milk and butter in a bowl; mix and pour into a casserole dish. Sprinkle with remaining cheese. Bake for 45 minutes.
