Ingredients:
  • 1 cup self-rising corn meal
  • 2 eggs
  • 1â�„2 cup canola oil
  • 1 cup cream-style corn
  • 1 cup sour cream
Preheat oven to 400 degrees (375 if using a glass pan), and grease a 9- by 9-inch pan
Mix all ingredients well. Fat-free sour cream or plain yogurt may be used in place of sour cream. Pour into pan and bake 15 to 17 minutes or until done.
