Cauliflower casserole
Vegetables & Side Dishes

  • 1 head cauliflower
  • 3 eggs
  • 1 pint cream or half and half
  • TBS dried parsley
  • 1/3 cup Mexican four-cheese style cheese
  • 1/2 cup plain, unflavored bread crumbs
  • 1/2 stick butter
Break apart the cauliflower and boil for 10 minutes in salted water. Drain and put in a baking dish.
Scramble 3 eggs into the cream and add dried parsley. Pour the cream mixture over the cooked cauliflower and then add the cheese. Sprinkle bread crumbs on top, then add sliced butter dabs. Cook at 350 degrees for a half hour until brown.
