Eggs & Cheese

  • 1â�„2 lb. ground turkey
  • 1â�„4 tsp. each salt and black pepper
  • 6 large eggs
  • 1â�„2 cup whole or 2 percent milk
  • 1â�„2 cup half and half
  • 1â�„2 cup shredded cheese
  • 1â�„4 cup each red and yellow bell pepper
  • 1â�„2 cup chopped green onion
  • 1â�„2 cup chopped mushrooms, optional
Preheat oven to 350 degrees.
Brown the turkey with salt and pepper in a skillet on medium heat until crisp. Beat the eggs, milk and half and half until the yolks are broken and mixed well. Add cheese, bell peppers, onion and mushrooms to the egg mixture. Fold in the turkey and mix well. Pour mixture into quiche or pie plate and bake at 350 degrees for 30-35 minutes. Quiche should be slightly brown on top and a toothpick inserted should be clean when removed. Serve immediately.
