PEA-ALMOND CASSEROLE
Vegetables & Side Dishes

Ingredients:
  • 2 TBS butter or margarine, plus extra for topping
  • 4 TBS flour
  • Salt and pepper
  • 2 cups milk
  • 1 can green peas, drained
  • 1 small can sliced mushrooms, drained
  • 1 small bag of toasted sliced almonds
  • 1 small container bread crumbs
Melt butter in a large pan; stir in flour, salt and pepper until a smooth paste forms. Add milk and let mixture come to a boil. Add peas and heat through. Mix in mushrooms and almonds. Place in casserole dish and cover with bread crumbs mixed with a small amount of melted butter. Brown in oven at about 400 degrees for 20 to 30 minutes. Serve hot. Makes 6-8 servings.
