SLOW-COOKER SWEET AND SOUR PORK

11â�„2 lb. boneless pork loin
3â�„4 cup barbecue sauce
1 (14.5 ounce) can chicken broth
1 (8 ounce) can pineapple chunks, drained
1 green pepper, chopped
2 cups instant white rice, uncooked
Cut the pork loin into 1-inch pieces and chop onion.
Place the meat in the bottom of a slow cooker and top with onions. Add the barbecue sauce and broth; cover. Cook on low 6-7 hours or on high for 4 hours. Stir in remaining ingredients and cook, covered, on low for 30 minutes or until rice is tender. Makes 6 servings.
