Stacked Potato Casserole
Vegetables & Side Dishes

  • 10 medium potatoes, boiled in skin
  • 6 eggs, hard-boiled
  • 4 eggs, raw
  • 1â�„2 pint heavy cream
  • salt
  • 1â�„2 stick butter (optional)
  • 4 slices raw bacon
Lay raw bacon over bottom of casserole dish. Peel boiled potatoes and slice 1�8 inch thick. Clean and slice hard-boiled eggs. Alternate layers of egg slices and potato slices in casserole dish.
Mix four raw eggs into cream. Pour over the layers of eggs and potatoes. Bake until pinkish-brown.
Good as a side dish to sliced ham or Polish sausage.
