Butterfly the pig (lay it down and cut the backbone from pelvis to skull, to allow the pig to lay flat) and remove the head and feet. Wash the hog with warm water and pat dry. Rub the pig with vegetable oil and kosher salt on the front and back side. Place the pig on the cooker, skin-side down, and cook at 275-285 degrees for 7 to 8 hours. Check the temperature after seven hours of cooking. The internal temperature should be 170-180 degrees.
