COLONIAL BATTER FRIED CHICKEN
Entrees

Ingredients:
  • 2 to 21?2 pounds chicken, cut up
  • 1 cup flour
  • 2 tsp. salt
  • 1?2 tsp. pepper
  • 1?2 tsp. baking soda
  • 1 cup buttermilk
  • Cooking oil to fill deep fryer
  • 1?4 tsp. salt
Soak chicken in salt water.
Preheat deep fryer to 350 degrees. Soak chicken in salt water. It will seal in juices and keep out grease.
Drain chicken pieces. Shake each piece of chicken separately in a paper bag with the flour, salt and pepper. Add the baking soda to buttermilk. Dip the chicken in the buttermilk mixture, then back into the flour mixture. Cook for 20-25 minutes. Drain on absorbent paper. Serves 4-6.
