  • 2 cups all-purpose flour
  • 1 TBS baking powder
  • 1/2 tsp. salt
  • 1 TBS sugar
  • 1/3 cup shortening
  • 2 eggs, slightly beaten
  • 1/2 cup milk
  • 2 egg whites
  • Additional sugar
Preheat oven to 425 degrees.
Sift together the flour, baking powder, salt and sugar; cut in the shortening until the mixure resembles cornmeal. Add milk to the eggs. Add the egg mixture to the flour mixture, stirring well to make a soft dough.
Turn the dough onto a lightly floured board; knead lightly. Roll dough out to 1/2-inch thickness; cut into four squares then cut each square diagonally in half. You may also cut the dough into circles. Brush cut dough with beaten egg whites and sprinkle with additional sugar.
Place the dough on a greased baking sheet and bake for 12-15 minutes. Makes 10-12 scones.
