5 or 6 medium tomatoes, quartered
1 medium onion, chopped
2 cloves garlic, minced
2 TBS Italian seasoning
3 slices bread, sourdough or whole wheat
About 1/2 cup bread crumbs
Preheat oven to 350 degrees.
Fill a small baking dish with tomatoes. Mix in chopped onion, garlic and seasonings. Sprinkle in sugar.
Tear up bread slices and stir them into mix (they will soak up some of the tomato juice, but not all of it). Sprinkle enough bread crumbs on top to cover and bake for 45 minutes.
Tomato Bake can be eaten hot or cold.
