  • 11/2 cup parsley, chopped stems removed
  • 2 TBS mint
  • 1 medium onion, chopped
  • 6 tomatoes, diced
  • 2 cucumbers, diced
  • 1 TBS salt
  • 1 cup bulgur wheat (cous cous), prepared according to package directions
  • 6 TBS lemon juice
  • 6 TBS olive oil
Mix all ingredients in a bowl and chill for at least an hour before serving. Serve with a plain pita, or some hummus as an appetizer, or as a side dish with some grilled fish or chicken.
