SQUASH CASSEROLE
Vegetables & Side Dishes

Ingredients:
  • 2-3 yellow or zucchini squash
  • 2-3 tomatoes
  • 2-3 onions
  • 2-3 green or red peppers
  • Salt
  • Pepper
  • 3 TBS flour
  • 3 TBS butter
  • 8 ounces grated sharp cheese
Preheat oven to 350 degrees. Thinly slice the squash, tomatoes, onions and peppers.
In a casserole dish, layer the squash, tomatoes, onions and peppers. Sprinkle lightly with salt and pepper. Dot with butter and dust with flour. Add half of the cheese to the vegetables; repeat layers, ending with the remaining cheese. Bake for one hour or until vegetables are tender.
