EGG AND CHEESE CASSEROLE
Eggs & Cheese

Ingredients:
  • 6 eggs
  • 1/4 cup flour
  • 1/2 tsp. baking powder
  • 4 ounces green chiles, drained
  • 2 cups 2% cottage cheese
  • 8 ounces shredded Monterey Jack and Colby cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 TBS Smart Balance spread
Preheat oven to 375 degrees. Spray a round glass casserole dish with cooking spray.
Beat the eggs lightly; stir in the remaining ingredients except the Smart Balance spread. Pour the mixture into the caserole dish. Melt the spread and pour over the mixture. Bake for 15 minutes then reduce heat to 325 degrees and bake for 35-45 minutes.
