  • 1 TBS butter
  • 1?4 cup brown sugar
  • 7 pineapple rings
  • 7 maraschino cherries
  • Yellow cake batter of choice
Preheat oven to 350 degrees.
The key to a great pineapple upside down cake is baking it in a cast iron skillet. Melt butter in an 8- or 9-inch cast iron skillet over medium heat. Stir sugar in until it dissolves. Lay pineapple rings in a circle with one in the middle. Place a cherry in the center of each ring. May place additional cherries in gaps, as desired.
Pour batter over fruit. Place skillet in oven. Bake for 30 minutes, or until the top of the cake is lightly browned.
When cake has cooled, hold plate over skillet and turn skillet and plate upside down so cake falls onto plate.
