  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 cups sugar
  • 1 cup shredded coconut
  • 1 cup black walnuts
  • 2 cups grated apples
  • 4 eggs
  • 11/4 cups oil
  • 2 tsp. vanilla
  • 1/2 cup orange juice
Preheat oven to 325 degrees.
Mix well flour, baking soda, cinnamon, sugar, coconut and black walnuts.
To dry mixture, add apples, eggs, oil, vanilla and orange juice. Beat well using mixer.
Pour mixture into tube pan and bake at 325 degrees for one hour and 30 minutes. While cake is baking, prepare two glazes.
Buttermilk Glaze
1 cup sugar
1?2 cup butter
1?2 tsp. soda
1?2 cup buttermilk
Bring all ingredients to boil. Keep warm. As soon as cake comes out of the oven, pour glaze over cake (still in pan). Let stand for 10 minutes before removing cake from pan.
Confectioners Glaze
2 cups confectioners sugar
lemon juice
Mix into confectioners sugar just enough lemon juice to make a glaze. Pour glaze over top of cake while cake is still warm.
