Contributed by: Tony Falcone
  • 2 lb. bottom beef round steak
  • 1?4 cup olive oil
  • 1 tsp. black pepper
  • 1/2 tsp. kosher salt
  • 1 tsp. granulated garlic
  • 6 slices Genoa salami
  • 1/4 cup shredded Parmesan cheese
  • 1 cup chopped fresh spinach
  • 3 cups marinara sauce
  • 1/2 cup red wine
  • chopped basil, to garnish
Slice steak into 3 very thin slices. Pound each slice lightly, then sprinkle each slice with olive oil and seasonings. Top each steak slice with 2 slices of salami, 1 tsp. Parmesan cheese and 1 TBS chopped spinach. Roll each steak with filling and form tightly.
Place 2 cups marinara sauce in a 2-inch-deep baking pan. Slide the rolled steaks into the sauce. Pour 1?4 cup wine over each steak, and let wine mix into sauce. Top rolled steaks with marinara sauce until almost covered. Cover pan with foil and bake at 350 degrees for 11?2 hours.
Remove foil and sprinkle with Parmesan cheese. Bake uncovered for 8 minutes.
Remove pan from oven and gently pull rolled steaks from sauce. Let stand for 5 minutes.
Serve with pasta. Top with sauce from the baking pan, leftover cheese, and chopped basil.
