Oven Roasted Carrots and Cabbage

  • 6 carrots
  • 1?4 to 1?2 head cabbage
Preheat oven to 350 degrees.
Cut carrots lengthwise and cut into bite-sized pieces. Steam for 5 minutes. Drain and place on baking sheet.
Cut cabbage into 1-inch wedges and place on baking sheet with carrots.
Drizzle vegetables with olive oil, salt and pepper. Cook in oven for 20 to 24 minutes.
