  • enough greens to fill two or three gallons
  • 1 ham hock (or hog jowl or fatback)
  • 1 tsp. baking soda (optional)
Wash turnip greens. Boil greens for 15 minutes. Cook ham hock in large, deep pan.
Pour out water from turnip greens and rinse greens with hot water. Put greens into pan with ham hock. Bring to a boil, then simmer for 11?2 hours.
Test greens halfway through cooking. If they are tough, put in 1 tsp. baking soda.
