Great Sausage Dish
Eggs & Cheese

  • 1 pound mild sausage
  • 1 bell pepper, chopped and diced
  • 1 large onion, diced
  • 8 ounces mushrooms, sliced
  • 1?4 cup water
  • 2 TBS butter
  • 10 large eggs
  • 1 pint sour cream
  • 12 ounces shredded sharp cheese
Preheat oven to 350 degrees. Spray baking dish with non-stick cooking spray.
Brown sausage. Sauté peppers, onions and mushrooms in water; drain. Add butter.
Beat eggs with 1 TBS water and sour cream.
Sprinkle 2?3 of the cheese in bottom of dish. Put cooked sausage over the cheese. Then layer vegetables over the sausage. Put the last of the cheese over the vegetables, then pour eggs on top.
Bake at 350 degrees for 45 minutes or until the center is set.
Let stand for 10 minutes before serving. Can be warmed later.
