Green Tomato Chow Chow

  • Yield: 18 pt
  • 12 onions
  • 10 sweet peppers
  • 3 sweet red peppers
  • 1 gallon shredded cabbage (approximately 5 lb.)
  • 2 quarts green tomatoes, chopped
  • 1?2 cup canning salt
  • 5 cups sugar
  • 2 or 3 quart vinegar
  • 1 TBS pickling spice, wrapped in cheese cloth
Chop or shred onions and peppers and mix well with cabbage and tomatoes.
Add 1?2 cup canning salt and let stand overnight.
Drain off water the next morning.
Mix sugar with vinegar. Aadd pickling spice and heat until dissolved.
Pour over vegetables and simmer 20 minutes. Don’t let it come to a hard boil.
Pack in hot jars and seal.
