5 chicken breasts or one turkey breast
2 cans cream of chicken soup (condensed)
1 cup mayonnaise
1 carton sour cream
1 cup sharp cheddar cheese, grated
1 TBS lemon juice
1 tsp. or less curry
Salt and pepper, to taste
3 packages frozen broccoli florets
Cook chicken and cut meat off bone into bite-size pieces.
Mix soup, mayonnaise, sour cream, sharp cheese, lemon juice, curry, salt and pepper in bowl.
Cook and drain broccoli. Cut up the broccoli as needed. Arrange broccoli in bottom of a large casserole dish. Sprinkle broccoli with Parmesan cheese. Layer chicken pieces on top of broccoli. Sprinkle again with Parmesan cheese.
Pour sauce over the contents of the casserole dish, and sprinkle a little more Parmesan cheese. Dot with butter. Sprinkle paprika over the top of the casserole.
Bake at 325-350 degrees for 30 to 40 minutes until hot throughout.
This dish freezes well. It serves 8 to 12 people.
