Vegetables & Side Dishes
Contributed by:
  • 1 cup carrots
  • 1 cup squash
  • 1 cup zucchini
  • 1/2 cup chicken stock
  • 1/2 stick butter
  • 2 TBS maple syrup
  • Salt and pepper, to taste
Cut carrots, squash, zucchini to coin sizes or one inch sticks. Blanch carrots 6 to 7 minutes or until soft. (Blanch means to put in boiling water, then remove and plunge into ice water to stop the cooking process.)
Combine vegetables with the stock, butter and maple syrup. Simmer until the liquid is mostly gone, stirring occasionally. Finish with salt and pepper. Toss well and serve.
Yield: 6 servings
