Candied Yams
Vegetables & Side Dishes

Ingredients:
  • 9 to 11 large sweet potatoes
  • 2 cups white sugar, divided
  • 1 cup dark brown sugar
  • 16 oz. dark corn syrup
  • 1 1/2 sticks butter, melted
  • 1 TBS vanilla
  • 1 TBS lemon flavoring
  • 2 TBS brandy or rum flavoring
  • 3 TBS all-purpose flour
  • 2 cups water
Boil potatoes until fork tender but not soft. Drain and let cool.
Spray or oil a large rectangular pan or dish. Slice potatoes. Measure out 1 cup white sugar. Layer potato slices, sprinkling evenly with the sugar. Let set overnight, if possible.
Preheat oven to 350 degrees.
Make the sauce: Mix syrup and butter. Bring to a boil. Add remaining 1 cup white sugar and 1 cup brown sugar and flavoring.
Make a roux of flour with water. Pour into syrup mixture and bring to a boil, stirring constantly. Pour over yams. Bake for 45 minutes to 1 hour.
