  • 18 Ritz crackers
  • 1 cup semi-sweet chocolate chips, melted
  • 1 TBS vegetable shortening
  • 3/4 tsp. peppermint extract
Line baking sheet with parchment paper; set aside.
Combine chocolate chips and shortening and heat for 1 minute in microwave on high power to melt. Stir and heat in 10- to 15-second bursts until chocolate is a smooth liquid.
Add 1/2 to 3/4 tsp. peppermint extract and stir. Mint extract is potent, so be conservative, and test the flavor.
Coat each cracker in chocolate: Dip in chocolate. Remove by lightly scooping it up from the underside with a fork, allowing excess to drain through tines. Place cracker on paper.
Put tray of crackers in refrigerator to solidify.).
