  • 1 cup chopped onions
  • 2 medium garlic cloves, minced
  • 5 cups water
  • 2 cups cubed potatoes
  • 2 cans great northern beans
  • 3 cups chopped kale (or any frozen greens)
  • 1 1/4 tsp. salt
  • 1 tsp. cumin
  • 1/4 tsp. cayenne pepper (optional)
Put onions, potatoes, greens and water in large pot and bring to a boil. Reduce heat. Cover and boil lightly for 10 minutes. Add remaining ingredients. Cook covered until greens are desired firmness and potatoes are done.
