BLUEBERRY SAUCE

Ingredients:
  • 2 cups unsweetened blueberries (fresh or frozen) or peaches, blackberries or strawberries. If using fruit other than blueberries, add extra 1-2 TBS sweetener.
  • 1 cup apple, pineapple or white grape juice
  • 2 TBS honey or agave nectar
  • 1 TBS cornstarch
Bring the blueberries, 3⁄4 cup juice and honey or nectar to a boil in a saucepan. In a separate small bowl, combine remaining fruit or fruit juice with cornstarch, stirring until cornstarch is dissolved. Slowly add to blueberry mixture, stirring constantly.
Continue cooking and stirring until mixture has boiled gently for about two minutes.
