Tomato Pie

  • 4 or 5 large tomatoes
  • salt and pepper, to taste
  • 1/3 onion, sliced
  • 1 cup grated cheddar cheese
  • 1 cup grated Mozzerella cheese
  • 1 cup mayonnaise
  • 1 egg, lightly beaten
  • 1/3 cup cooked bacon, plus more
  • 1 pie shell
Peel and slice tomatoes. Sprinkle salt and pepper over them. Pat dry.
Layer tomatoes and onion in pie shell.
Combine cheeses, mayonnaise, egg and bacon. Spread over tomatoes. Put more bacon on top. Bake for 30 to 40 minutes, until brown and bubbly.
