  • For crust:
  • 11/2 cups flour
  • 1/3 cup light brown sugar, packed
  • 1 stick margarine
  • For topping:
  • 2 eggs
  • 1 cup light brown sugar, packed
  • 11/2 cups coconut
  • 1/2 cup chopped pecans
  • 2 TBS all-purpose flour
  • 1/2 tsp. baking powder
  • Dash salt
  • 1/2 tsp. vanilla
  • For glaze:
  • 2 TBS melted butter
  • 3 TBS lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
Preheat oven to 375 degrees.
Make crust: Cut flour and butter together. Mix in brown sugar. Press into a 9- by 13-inch baking pan and bake for 10 minutes.
Make filling: Beat eggs well. Mix all filling ingredients and pour over baked pastry. Return to oven and bake at 350 degrees for 20 minutes.
Make glaze: Melt butter and let cool. Mix with other ingredients. Pour blaze over baked squares.
Let bars cool before cutting.
