QUINOA WITH ONIONS AND RED PEPPER
Vegetables & Side Dishes

Ingredients:
  • 2 TBS olive oil
  • 4 medium yellow onions
  • 3 cloves garlic
  • 1/2 tsp. sea salt
  • 1 large red pepper
  • 2 cups rinsed quinoa
  • 4 cups hot vegetable stock
Chop onions and sauté in olive oil until slightly brown. Mince garlic. Add garlic, sea salt and pepper and sauté until onions are carmelized.
Add quinoa and stock. Bring to a simmer. Stir once after five minutes, then simmer for 35 minutes or until water is cooked in.
